Disciples Escoffier International is a non-profit association created in Nice in 1954, dedicated to the culinary arts and the transmission of knowledge.

We uphold the legacy of Auguste Escoffier in classic French cuisine, while striving to maintain a spirit of innovation.

The Legend

Auguste Escoffier (1846-1935), the “King of Chefs, Chef of Kings”, is widely regarded as the father of modern French cuisine. He was also a pioneer of the fine dining and luxury hospitality industry, as co-founder of the Ritz and Carlton hotels.

Disciples Escoffier Around the World

Today, the Disciples Escoffier counts delegations in 30 countries with more than 30’000 Disciples.  There are 14 delegations in Asia Pacific: Australie, Cambodia, China PRC, Hong Kong, Indonesia, Japan, Macau, New Caledonia, Philippines, Singapore, South Korea, Tahiti-French Polynesia, Thailand and Vietnam.

Culinary Innovation

Escoffier kept a willingness to innovate throughout his career, recognising that “cooking will evolve in parallel with society’s evolution, while always remaining an art form”. He was also a remarkably generous man, and we strive to maintain this spirit of modernity and solidarity.

The Transmission of Knowledge

Disciples Escoffier organizes and participates in numerous gastronomic and culinary events around the world. We seek to engage younger people and share our passion for the culinary arts, and hold our Young Talent Trophy (YTT) annually, a global competition bringing together the world’s best young Chefs under 25.

Giving Back

Auguste Escoffier was a remarkably generous man, dedicated to fight against hunger and poverty. We seek to emulate his spirit and make a positive contribution to society by initiating charity events in France around the world, as well as supporting food-related charities.
