Our programs

ICDE offers an array of programs in culinary and pastry arts, ranging from a double Bachelor degree program in Culinary Entrepreneurship Innovation, all the way to short culinary and pastry workshops. Our flagship programs are the Professional Diploma in Culinary Arts and the Professional Diploma in Pastry Arts, that offer a double Diploma delivered by both ICDE and the French Ministry of Education.

While our curriculum is focused on French culinary and pastry recipes, our teaching methodology is fundamentally based on cooking techniques. Techniques are the building blocks upon which you will draw to prepare a recipe from A to Z, and they are common across all types of Western cuisines. Our long-term goal at ICDE is to give aspiring chefs the core techniques and skillset from which they can improvise and explore their own culinary creativity.

Bachelor degree program

A 4-year long program, the double Bachelor degree program of Technology in Culinary Entrepreneurship Innovation is currently offered in partnership with European Communication School (ECS) in France and the Rattanakosin International College of Creative Entrepreneurship (RICE) in Thailand.

Professional Diploma in Culinary Arts

(Double Diploma)

A flagship culinary program, this is an intensive course, open to beginners and “foodies”, career shifters or F&B professionals alike. It is designed to set students on a path to become junior chefs or rising culinary professionals in the global fine dining industry. The curriculum is firmly rooted in the traditions and fundamentals of French gastronomy, while integrating some of the latest techniques, equipment, and plating trends.

The program is structured into 2 modules: Culinary Arts Fundamentals and Advanced Culinary Arts, each lasting 270 hours and leading to a certificate. Upon successful completion of the 2 modules and a final exam, students obtain two Diplomas with worldwide industry recognition: both the Professional Diploma in Culinary Arts (delivered by ICDE), and the Level 5 Diploma in Culinary Arts (delivered by the French Ministry of Education). An optional internship in a local fine dining establishment or luxury hotel is also available to our graduates.

Professional Diploma in Pastry Arts

(Double Diploma)

A flagship pastry program, this is an intensive course, open to beginners and “foodies”, career shifters or F&B professionals alike. It is designed to set students on a path to become junior pastry chefs, cake designers or rising pastry professionals in the global fine dining industry. The curriculum is firmly rooted in the traditions and fundamentals of French pastry, while integrating some of the latest techniques, equipment, and creative trends.

The program is structured into 2 modules: The Art of French Pastry and Classics of French Pastry, each lasting 240 hours and leading to a certificate. Upon successful completion of the 2 modules and a final exam, students obtain two Diplomas with worldwide industry recognition: the Professional Diploma in Pastry Arts (delivered by ICDE), and the Level 5 Diploma in Pastry Arts (delivered by the French Ministry of Education). An optional internship in a local fine dining establishment, pastry shop or luxury hotel is also available to our graduates.

Chef Apprentice in Culinary Arts Certificate

Currently offered in Manila (Philippines), the Chef Apprenticeship in Culinary Arts is an intensive training program open to beginners, with a particular focus on young students who aspire to enter quickly the professional workforce. The program has been thoughtfully designed to teach you the core elements of culinary arts.

The program is structured into two parts. The first part of the program, the Culinary Arts Fundamentals module (270 hours), is dedicated to culinary training in the kitchen lab and classroom. It covers a vast amount of material in a short period of time, with over 150 recipes and culinary techniques. The second part of the program consists in a 3-month local internship, to give you real-world industry experience and smooth your entry into the Food & Beverage or Hospitality sectors.

Our objective is to you prepare you to meet the demands of working in a professional kitchen, with the proper techniques and work habits necessary to succeed in the industry. Upon passing the final exam, you will be awarded with the Chef Apprentice in Culinary Arts Certificate, delivered by ICDE.

Culinary & Pastry workshops

In a friendly and professional setting, ICDE offers a wide range of exciting short courses designed for all beginners and culinary enthusiasts. These courses provide an introduction to a host of culinary and pastry recipes, from French classics to more contemporary and innovative dishes. Taught under the guidance of our Master Teachers and professional guest chefs, the course content has been designed to provide the same level of culinary excellence as our diploma and certificate courses.
